Enzymes are made up of various proteins and are part of every one of our bodily functions, including sight, hearing and, most importantly, digestion. Without enzymes we don’t function.

Our bodies produce enzymes and we get enzymes from food. So if we eat food with enzymes still intact then our bodies need not overwork to use the enzymes it produces to digest that food.

Cooking creates free radicals, which are the major cause of cancer. Heating food above 104-120 degrees F. degrades or destroys live enzymes in food and nutrients such as vitamins, minerals and other proteins get lost.

Raw foods include bacteria and other micro-organisms that affect the immune system and digestion by populating the digestive tract with beneficial gut flora; cooking generally kills these. Raw foods such as fruits and vegetables are high in antioxidants and some raw foodists believe it can help to stifle signs of aging.

Our bodies are designed to be alkaline and are like an alkaline battery, running on electrons. Things that are healthy ‘contribute’ electrons/energy, and are called alkalizing. Things that are unhealthy steal electrons/energy, and are called acidic (which means to burn up, rust, break down or decay).
